Psagot Blanc De Blanc

The winds blow on the high mountainous ridge. The terra rossa soil nurtures row upon row of vines that grow lush and strong in the warm sun.
This is not the Champagne region of France. This is here, in the heart of the Land of Israel, on the high summits of the Jerusalem Hills. Sparkling wine made using the age-old traditional techniques is enchanting; a mystery that cannot be foretold. No one, can predict exactly what yeast will do to the wine.
As the yeast disintegrates ever so slowly, the wine’s flavors change for years, like the clouds above the hilltops.

 

Psagot Blanc de Blanc is the first sparkling wine in history to be made using the age old Méthode Champenoise, from grapes grown on Israel’s central mountain ridge, in terroir almost identical to that in France’s Champagne region, the birthplace of champagne, which beautifully reveals the uniqueness and strength of the soil and the local terroir.

The grapes for this wine were hand harvested at night from the finest plots of our highest quality chardonnay vineyards in the Jerusalem Mountains. The Blanc de Blanc started fermentation in stainless steel, where it aged for 6 months, then underwent secondary fermentation in the bottle in the traditional Champagne method, creating a liquid perfume of refreshingly stylish, elegant and caressing complexity.
The nose and palate reveal lifted, rich apple, and yeast doughy aromas.

Grapes are harvested from vineyards in the Judean mountains, 900 meters above sea level.

Grapes were aged on lees for 6 months. after secondary fermentation in the bottle  it aged for 6 more years
